The rice can be either of brown or white but is mixed with a special vinegar to give it its taste and texture. Sashimi is a traditional Japanese dish where fish is thinly sliced and served as is or sometimes over a ball of rice. When you find this on a Japanese menu it is generally ordered in pieces rather than sushi rolls.
